		<description>This is the first I&#039;ve read of interesterified fat, but the chemical ability to shuffle the fatty acid chains makes sense.  I thought that with trans fats largely disappearing from labels, I could start enjoying some of the processed foods on occasion. I guess I still can, but I&#039;ll stick largely to natural foods, which was my instinct several years ago.</description>

		<description>There&#039;s now a new fat, created to replace trans-fats.  Interesterified fat, which puts the (cis) PUFA on the 1 or 3 carboxylate, as opposed to a trans PUFA on #2.  In nature, #1 and #3 are saturated, so this is a new, strange triglyceride.  However, this can be used in processed foods, and the package can say &quot;no trans fat&quot;.  Let the buyer beware?</description>
